Description
The traditional butcher's shop, La Paupiette Enchantée, offers a wide variety of meats (pork, beef, lamb, poultry), from farms in the Saint-Yrieix region and surrounding areas. One of its specialties is Saint-Yrieix, a young, traditional beef (regulated local production), which has tender, pink meat. The butchers, Pierre Mathieu and Léo Négrier, will choose most of the animals directly "on the hoof" at the farm, which will be sold in their butcher's shop. Charcuterie specialties: andouilles, black puddings, pâtés, head pâtés, cooked sausages, dry-cured hams, Limousin crickets, pork rillettes... and of course, the establishment's signature dish: the paupiette!
