He is one of the rare specialists to know the richness and quality of the flavors of the Cul Noir breed of pork, which he prepares in his own way, in escalopes accompanied by foie gras or prawns, in roasts lined with chanterelles or porcini mushrooms. He invented around sixty recipes to highlight this extraordinary meat. He is the president of the Cul Noir Pork Brotherhood of Limousin. This experienced chef knows how to combine products from our Pays de Saint-Yrieix region. He is the contact person in New Aquitaine for the Institut du Goût. He is also the head of the limousine brigade of the Escoffier International disciples.
